Make These 9 Refreshing Spring Drinks This Weekend

The Spring season is here, and it’s time to crack those frozen joints, peel off our artfully-layered combos of clothes, and put some ice on your drinks without shuddering at the chill. In any other year, the season would have also marked the highly-anticipated de-winterizing of bars and restaurant patios–umbrellas unfurled, benches removed from storage, and cocktail menus set to welcome throngs of patrons. Unfortunately, with the pandemic still in our midst, most of our Springtime drinking will likely happen in the confines of your home (much like last year!).

In any case, choosing to avoid the crowd shouldn’t be a reason not to mix up something for yourself that reflects the season! Think easy-to-mix, light, and refreshing– match your high spirits with these nine classic Springtime cocktails (and mocktails) you can make this weekend while you unthaw!

Cotton Candy Drink

A sparkly and sweet cotton candy mocktail that’s so yummy and easy to make! With just two ingredients, your kids will love you for life!

What You’ll Need:

  • Raspberry Gingerale
  • Cotton Candy
  • Cherry for garnish (Optional)

Directions:

  1. Divide the cotton candy evenly into the cups.
  2. Pour over with the soda.
  3. Serve immediately. Garnish with whole cherries if preferred.

Sparkling Strawberry Mint Limeade

A delicious strawberry limeade drink made even better with that special touch of mint! Make this refreshing drink and instantly feel like you’re sipping on a strawberry mojito!

What You’ll Need:

  • ½ pint fresh strawberries hulled
  • 10 mint leaves plus more for garnish
  • 5 fresh limes juice from all and zest from two
  • 72 ounces seltzer water
  • 1 ½ cups sugar
  • ice
  • additional limes, sliced optional garnish
  • additional strawberries, halved optional garnish

Directions:

  1. Add strawberries, mint leaves, lime juice, zest, and sugar to a blender and blend until liquified. It will be the syrup for your limeade.
  2. Add syrup to a pitcher and top up with seltzer water.
  3. Add additional lime slices, mint leaves, and halved strawberries if desired. Serve over ice.

Tropical Mango Faux-jito

If you’re a huge fan of tropical drinks, you’ll surely enjoy the heavenly combination of mango and mint in this delicious mango mojito– minus the alcohol, of course!

What You’ll Need:

  • 1 lime quartered
  • 2 sprigs mint
  • 1.5 oz. jalapeno simple syrup 1 shot glass
  • 3 oz. mango nectar
  • 3 oz. seltzer water
  • Jalapeno Simple Syrup:
  • ½ cup sugar
  • ½ cup water
  • 1 jalapeno (remove seeds)

Directions:

  1. Make your simple syrup by bringing water to a boil in a small saucepan and stirring in the sugar until dissolved.
  2. Remove from heat and add in jalapeno. For a slight jalapeno flavor, remove after 15 minutes. Otherwise, leave the jalapeno in until it reaches the intensity you like.
  3. In a large cocktail shaker, muddle your mint with lime wedges and your simple syrup.
  4. Fill your shaker with ice and pour the mango nectar on top. Shake vigorously until the shaker feels very cool to the touch.
  5. Meanwhile, fill a rock glass with ice. Pour your mango mojito into your glass and top with a seltzer. Garnish with a lime wedge and extra mint. Enjoy!
